Also known as 'methi seeds', fenugreek seeds are particularly rich in iron and vitamins A and D. They are also known to be good for indigestion, stomach pain and milk supply. Simply crush one teaspoon of seeds per one cup, add boiling water and allow to infuse for 3 minutes. They have a sweet, maple syrup-like smell and flavour with a hint of bitterness. It is a common ingredient in Indian curries, as well as Turkish, Persian, Eritrean, Ethiopian and Egyptian cuisines. It can be used for pickling and is the perfect addition for homemade curry powder and a range of other spice blends. Store in an airtight container in a cool and dry place.
