I make my own gluten free flour mix, which so far seems to work well for everything including crepes! It’s a winner! To make mix 3 parts organic brown rice flour, 3 parts organic tapioca flour, 2 parts organic sorghum flour and 1/2 a part organic coconut flour. ✨ To make these delicious crepes simply add 2 cups of your flour blend to a large bowl, add 2 eggs and whisk into a paste, next add 1 tsp vanilla extract, 1 1/2 tsp wattleseed and 2 cups of milk of your choice, I use almond or cashew usually but today I used hemp and it worked perfectly. The wattleseed gives a beautiful malty flavour which works well with any filling. Today I filled with a blueberry cashew cream and berries, with a cashew butter sauce on top! Happy weekend everyone!!
