vegan mac and cheese

ingredients
  • 1/3 cup activated cashews
  • 2-3 tbsp nutritional yeast
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 cup filtered water or veggie broth
  • juice of 1/4 lemon
  • a pinch of salt and a good crack of black pepper
  • 2 tbsp olive oil
  • 1/3 cup steamed squash/sweet potato/pumpkin
Directions
  1. Blend 1/3 cup activated cashews with 2-3 tbsp nutritional yeast, 1/4 tsp onion powder, 1/4 tsp garlic powder, 1/4 cup filtered water or veggie broth, juice of 1/4 lemon, a pinch of salt and a good crack of black pepper on high speed until smooth and creamy.
  2. Next add 2 tbsp olive oil and 1/3 cup steamed squash/sweet potato/pumpkin and blend again into a smooth cheesy sauce.
  3. Add to your favourite pasta with some wilted greens and/or steamed broccoli and top with some crushed chilli.
